These easy-to-make cookies are low-sugar and gluten free.
½ cup softened butter
¼ cup Truvia Baking Blend sweetener
.85 cup of gluten-free flour (e.g., Bob’s Red Mill)
1 teaspoon vanilla
1/8 cup chopped walnuts
1/8 cup chopped pecans
½ cup gluten-free crushed cornflakes (I use Nature’s Path Organic)
Cream butter and Truvia. Add other ingredients. Mix and form into small balls and flatten them. Bake for 20 minutes at 300 degrees.
