Try this great gluten free antipasto salad from Dr. Marcantel’s kitchen!

Below is a list of suggested ingredients mentioned in the video. There are no “rules” to this recipe–pick your favorite ingredients and add them in whatever portions you like. Be creative and have fun!

Suggested ingredients:

*Jalapeno cheese, chopped in small squares
*Chopped ham or smoked turkey
*Turkey pepperoni
*Sliced pastrami
*Black or green olives (garlic olives are great!)
*Olive oil
*Zucchini–chopped and slightly cooked
*Chopped raw tomatoes
*Avocados
*Cooked red lentil or black bean pasta
*Pimentos (adds color!)
*Sugar free bread and butter pickles for added sweetness
*Hard boiled eggs for extra protein

Yum! I’ll give this a try soon. The only other ingredient I might add is pepproncini as I prefer savory over sweet. Thank you so much!
